Brebirousse d'Argental

Brebirousse d'Argental is a pure sheep's milk brie-style cheese made in the Lyon Region of France. Its bloomy white rind is edged in pinkish orange and when perfectly ripe will sink slightly around the perimeter. Its unique shape, colour and packaging make it a real feature on the table.

The interior paste looks like vanilla pudding. It is rich, creamy and thick on the tongue. Brebirousse tastes buttery, salty, with a little sweetness and hints of meadow, but not obviously a sheep's milk cheese. The texture is creamy and velvety at its peak ripeness. It spreads wonderfully on a sliced baguette and pairs with a crisp dry white to cut through its richness.
