Saint Albray

Made from pasteurized cow's milk, this Saint Albray is formed into a shape of a flower with each "petal" forming a scalloped silhouette. Saint Albray slices beautifully and is mild and moist, yet retains its body despite its creamy nature. Its enduring success comes from the distinctive taste. As a young soft ripened cheese, St. Albray resembles a rich and mellow Camembert, but with a less intense flavor. Within the aging process, it develops the hearty, robust flavor and rich aroma of a traditional washed-rind cheese. This cheese comes from the Aquitaine region of France.
